Green Smoothies
Ingredients:
Method:
Blend all ingredients until smooth and creamy, have fun coming up with your own creations!
- 250ml Water or Coconut Water
- 2 Large Kale leaves (not the stalk)
- ½ Cucumber
- 1 Lemon juice/pulp
- Celery leaves or Spinach leaves
- 1 Serve Fruit; small banana, or mango, or paw-paw, or kiwi fruit, or pineapple, or frozen berries.

Sarah's Osso Bucco Soup
Ingredients:
4 Osso Bucco pieces (leave fat on)
2 onions
4 cloves garlic
1 knob ginger
1 small pinch iodised salt
2 carrots
1 sweet potato
1 broccoli head
1 small white potato
10 button mushrooms
1 leek
1 tbsp paprika
3 litres filtered or alkaline water
1 tbsp black pepper
1 tbsp olive oil
1 can legumes (adzuki, black bean, navy, chickpeas etc)
½ bunch spinach
½ zucchini or squash
½ small pumpkin
Method:
1) Add 3litres water to slow cooker
2) Add Osso Bucco
3) Leave for 2-6hrs
4) Remove meat from bones and set aside
5) Prepare veggies
6) Heat large saucepan
7) Add oil, garlic, black pepper, onions, leek, and paprika, salt and brown.
8) Strain liquid into saucepan
9) Add meat back in (including fat)
10) Add hard vegetables (pumpkin, potato, sweet potato, carrots) and boil
11) Add legumes
12) Add soft vegetables (spinach, broccoli, zucchini, mushrooms, celery)
13) Serve in a large bowl, add fresh coriander or basil on top
14) Enjoy.

Meat or Vegetable Broth
Meat Broth:
· In a large saucepan add between 1-3L of filtered water and bring to the boil.
· Add organic beef bones (can use Osso Bucco) OR whole organic chicken OR wild caught Australian or New Zeleand fish to boiling water. Allow to
boil for a few hours, then simmer or put in a slow cooker overnight.
· Remove meat from bones, set meat aside in another dish and discard bones.
· Strain liquid to remove scum or leftover bits.
· Allow broth to cool
· Remove layer of fat on top and discard.
· You can freeze half of the broth/jelly. This is a great base for making soup. Or you can add boiling water and drink.
Vegetable Broth:
· In a large saucepan add between 1-3L of filtered water and bring to the boil.
· Add organic vegetables such as garlic, onion, ginger, chillies, root vegetables, sweet potato, pumpkin, lentils (that have been soaked overnight and
rinsed well) etc to boiling water. Allow to boil for a few hours or put in slow cooker.
· Strain liquid to remove leftover vegetable matter or if you prefer leave it in there and make a vegetable soup.
· You can freeze it, or you can add boiling water and drink.
Broth is very nutritious and contains many nutrients such as vitamins, minerals and amino acids. It’s a good source of protein without all the work for your body; the hard work is already done. It is also very good for your connective tissue ie, skin, hair, nails and joints. Very nourishing!
